I was excited about the wine thief. It does take a good sample, and it's easy to return to the fermenter. The big draw for me was that it's designed to hold a hydrometer for testing.
Here are the two problems that complicate things though. Taking a sample agitates the sample, so you have a nice little head of CO2 where you're trying to take your hydrometer reading. Hard to get a reading. This is slightly alleviated by VERY SLOWLY dipping the thief into the carboy/bucket. Second, it's pretty hard to keep the hydrometer level inside the thief to get an accurate reading. It just leans to one side, and the thief size prevents you from reaching in to stabilize the hydrometer.
