Do not look into the beer for a short primary. Tasting it along the way it absolutely needs anywhere from 4-5 week in primary. Hit OG right at 1.054 and FG dropped to 1.006. Using liquid yeast it hovered around 1.012 for a week or so after about 3 weeks. Took it out of the fermentation chamber and left at room temp (70*) for another two weeks. finished up excellent with an amazingly dry finish. I use liquid yeast with stir plate starter and kept fermentation temp within a degree or two of the lowest temp the strain can endure for three weeks then finished at room temp for another two. I usually keg but slated this batch for bottling. Doesnt disappoint!
