Used Safbrew S-33 instead of the recommended yeast due to trying to brew for lower calories and carbs. Dry pitched it at 70 degrees and was concerned that I made a mistake using the non-recommended yeast due to how quickly it took off- literally fermenting like crazy after just a couple of hours and then died off just as quickly after about 3 days. Let it sit for another 4 days in the primary and while no visual fermentation was taking place, it did continue to ferment a bit more. Spent 3 days in a secondary with consistent FG, then I lagered for a week and a half and kegged. Sat for a week in the keg and I have only just started the keg, but it's definitely what I expect from a Cream Ale- light, refreshing, and not too hoppy.
